Tour Description:

The Cocoa Black Chocolate and Pâtisserie school in Peebles offers a range of classes to satisfy all from the mildly curious to those with a more serious chocolate obsession. Tuition is provided by culinary Olympic winning chef Ruth Hinks. Ruth has spent over 20 years working with chocolate and brings a great depth of knowledge, passion and fun to each session.
 



A Taste of ChocolateA Taste of Chocolate (1.5 hours)

Taste some of the World’s finest chocolate. Watch a chocolate making demonstration. Learn how to recognise and appreciate good quality chocolate and discover your favourite.

Come along and sample some of the World’s finest chocolate including Sao Tomé and Papouasie. An enjoyable and informative session, this class teaches how to recognise and appreciate good quality chocolate. Relax and savour every mouthful as you watch a demonstration by a professional chocolatier. Learn how chocolate is made and how differences in the manufacturing process can affect the taste and texture of the final product. Sample 8 types of chocolate including blends and single origin and learn what makes them so different. Use your new knowledge and tasting scorecard to grade each chocolate and to identify your favourite.

Childrens Chocolate WorkshopsChildren's Chocolate Workshops (2 hours)

Fun, practical workshops designed for kids aged 12 and over. Seasonally themed classes held throughout the year. Take away your chocolates to enjoy at home. Child friendly venue with viewing gallery for parents.

These workshops have been specially developed for kids who want to put on an apron, roll up their sleeves and make their own chocolates. Budding chocolatiers will be taught how to melt down chocolate and how to use chocolate moulds. There are four seasonally themed classes to choose from: (1) Christmas Treats; (2) Create your own Easter egg; (3) Summer Chocolate Fun and (4) Scary Halloween Chocolates. An instructor will be on hand to answer any questions and to provide a few hints along the way. At the end of the session you can take away your chocolates to share with your friends.

A hands on class combining traditional French and modern culinary techniques. Learn from a professional pastry chef as you create and decorate a selection of mouth watering tarts.

Let a professional pastry chef teach you how to create and decorate a classic French pear and almond tart, a raspberry and vanilla tart and an indulgent chocolate tart. The class combines traditional French techniques and recent innovations in glazing and garnishing. Learn skills which will enable you to invent and create beautiful tarts at home. Transportation from Edinburgh is not included. The Cocoa Black Kitchen & School is located in Peebles, just outside Edinburgh.

The classes are run in a fully fitted out kitchen warehouse in Peebles which has plenty of parking available.

First Buses 62/62A runs an hourly bus service from Edinburgh (approximately 50 minutes).
